Ingredients

3 tablespoons ghee. (if you don't have ghee, use oil)

3 bay leaves

9 cloves

9 whole green cardamoms

1 tablespoon cumin seeds

3 cups basmati rice

3 3/4 cups water

1 1/2 teaspoons salt, or to taste

Optional: 1 to 3 green chilis sliced.

Instructions

Wash the rice 4-5 times until the water turns clear. Drain and set it aside.

Set the Instant Pot to Saute mode and preheat. Once it's hot, add the ghee. Then add bay leaves, sliced green chili, cloves, green cardamom, and cumin seeds. Let the cumin seeds splutter.

Add the rinsed basmati rice to the pot. Stir the rice with the spices for 30 seconds. Then add water, salt, and stir.

Close the pot and secure the lid. Set the Instant Pot to Pressure Cook mode. Cook on high pressure for 5 minutes.

After the timer goes off, carefully perform a manual pressure release per the manufacturer's instructions. Once the manual pressure release is completed, remove the lid.

Fluff the rice with a fork.
